The above Basket of Flowers looked lovely that I made to remember my Mother on what would have been her Birthday….She would have been 100 years old if she had still been alive. Mum died when she was nearly 89 yrs old and I don’t usually think to do something special but this year I am glad that I did.

Sometimes it is nice to look back and think about some of our family who are not with us here on this earth anymore. Mainly to remember the good times – and to picture in our mind how precious they were. Even if we did not get on well with whoever it was they were still part of our lives that helped us to be who we are today.

Thought I would put a Recipe here and maybe a Poem to follow.

Here is the Recipe: Avocado Mayonnaise:

1 – Whole Egg; 1 cup-Oil; 1 Tbsp – White Wine Vinegar, 1 soft – Avocado; juice of half Lemon..

Peel Avocado, remove stone. Place in blender, along with Vinegar, Lemon & Egg. Whiz for 1 minute. Slowly add Oil in a thin stream until the mixture thickens. Serve as a Dip, with Vegetables or as a Sauce for Seafood Salads.
