Corn Chowder
2 rashers-Bacon (chopped); 1-Onion; Stick or 2 of Celery; 1½cups-Milk; 1cup-Partly Cooked Rice; 1-Carrot (grated); 1can (420g)-Creamed Corn; 1can- (420g)-Corn Kernels (drained); Cheese (grated for topping).
Fry Bacon, Onion & Chopped Celery till soft & brownish to bring out the flavour. Add Milk, Rice & Grated Carrot. Cook till Rice takes up the Milk. Add both cans of Corn & mix well.
Pour into a Casserole dish, put grated cheese on top & cook in a moderate oven till cheese is browned.
Turn oven off & leave dish in for a while to soak up juices.

2 – Ripe Avocado’s, half -Cup Prawns (cooked ,peeled), Seafood Dressing, Pepper & Garlic Powder to taste. 4 – thin Slices Red Capsicums; Onion chopped fine if liked.
Method:
Cut Avocado’s in half, take out seed, fill each with Prawns & Onion, Spoon over the Seafood Dressing. Sprinkle with Garlic Powder & Pepper.
Decorate with a piece of Capsicum on each.
Keep cold in fridge until ready to serve as a starter.
Alternative:
Use any cold cooked white Fish (diced) or a mixture of Fish & Prawns. Garlic & Pepper can be mixed in with the Seafood dressing if liked instead of sprinkling on top.

Sometimes you only need a few cuttings of flowers with some leaves from the garden to make a lovely arrangement.
I hope you can find some kind of flower from your garden or maybe purchase some from the shop – to make a special arrangement for your kitchen or lounge room.
It is amazing how flowers can lift the spirit and we can receive some joy from their perfume also from their presence in our home.
Even one flower or a couple of small cuttings of green leaves in a vase or glass can be very nice.
In the kitchen if you put a sprig of Mint in a glass or other Herb that you specially like somewhere near the sink it is really nice to touch one of their leaves between your fingers and smell their particular perfume. It can give you a lift in your spirit while washing up…..etc., Remember you can also eat one of the leaves off of your special Herb, they are very good for us.

Flap Jacks:
6 oz-Butter or Margarine; 6 oz-Demerara Sugar; 8 oz-Rolled Oats; pinch of Salt.
Cream the Butter until soft. Mix together Sugar, Oats & Salt then Stir into the Fat. Transfer the mixture to greased tin 9” by 12” and spread evenly. Bake for 30 mins. At Reg. 5. or 180 deg. When cooked leave for a few minutes in the tin, then cut into squares or fingers.

“Pansy Flower ”
Hello, I am a Pansy Flower, with a face upon my Petals.
My face is full of colour – Purple, Red and Yellow.
You can see my face if you look quite closely.
My face looks to the sky.
Although I am beautiful I am really quite shy.
I hide among the taller plants, they are so high and lofty.
But I don’t mind a bit, because I’ll never – ever be lonely.
We usually grow in clusters you see, us dearest little ’Pansies’.
Children love to peer at us, they wonder if we can see them.
Yes of course we can.
We see the Sun, we feel the breeze, the lovely refreshing rain.
We love to grow in our little clumps and we cheer you up
if you feel down in the dumps.
I have no arms or legs you know but I have good strong
leggy roots.
So grow me in your garden beds or put me in a pot.
Just remember not to put me somewhere that is really too hot.
Remember I am your little Pansy friend
with a beautiful friendly face. …

Just Artificial & Dried Flowers today but they still look lovely.
Do you like Bananas and Dates? This is a Gluten Free recipe that I have made and seems to work O.K. It is also good to eat for anyone who is not gluten free. So all family can hopefully enjoy it.
I also found it was quite tasty with butter and lemon curd (spread) or jam put on it when you cut a slice to eat.
Round ones are good but I made a square one which is easier to slice and butter.
Here is my new Recipe:……
Date & Banana Cake:
3cups: Gluten Free Self Raising Flour.
1cup: Dates + heaped Teaspoon Bi-Carb.
2: Banana’s or (3 small ones) Mashed
Sugar to taste at least half a cup.
1teaspoon: White Vinegar.
2oz: Margarine.
Method:
ToSoak Dates: Sprinkle with the Bi-Carb, – Cover with Boiling Water – allow to soak half to 1hour. (I find it best to cut Dates in half before soaking to make sure no date stones are in them).
Rub Margarine into Flour with your hands, then Mix All Together(yes – put Date Water in) if necessary add a bit more water but don’t make the mixture too wet.
Put into lined Baking Tin….
Sprinkle over the top of Cake Mixture with extra Sugar.

Look what a lovely Colour these Beautiful Flowers are.
These are the Flowers on a tree in my front garden. However I am not sure what the tree is called. Mostly when it is in full bloom all the leaves have dropped off. The small green birds love to sip the nectar from inside the petals.
So today maybe the day is the day to pick or choose a red flower to put in a vase on your table or workspace. They really do brighten and cheer the room up ……… But…….. if you cannot find a red flower it is nice to put some other colour in, maybe with some green leaves to make a special show that will last for a few days to give pleasure to whoever will see them.

How about choosing to have Fish for dinner –
it is excellent protein for us and can be very tasty.
Here is a Pen & Ink Drawing that I did of a Fish.
Yes This is a Fish….not sure what sort though.
So what Fish do you like to eat?
I think I like most Fish really and find there are lots of ways to cook them.
The main Fish around here are ….North West Snapper, Black Snapper, Pink Snapper, Taylor, Mullet, Yellow Tail.. Also Crabs and Cray’s (Lobster)
Non edible Fish or Creature’s are: Dolphin, Sharks (the small Sharks are good to eat) Groupers, Blowies, Sea Snakes, Turtles and the usual small Sea Creatures that abound in most places like Star Fish, Jelly Fish, Stone Fish, Cuttle Fish. We have beautiful beaches that you can stand on the Shore to Fish from.
Our beaches can rival the best of anywhere in the world.
Here is a Recipe: – Salmon Mornay
415g,tin-Pink Salmon; 2cups-Cooked Long grain Rice; Cheese Sauce; Grated Cheese; White Pepper.
Method:
Spread the Cooked Rice into a Lamington Dish, Pile the Salmon on top of the Rice, Cover with your Favourite Cheese Sauce and Top with Grated Cheese. Sprinkle with the White Pepper.
Put into a hot oven until heated through and Cheese has melted.
Serve Hot.

Alternative:
Tuna can be used instead of Salmon.
Other tasty things to make with Fish are: – Fish Cakes, Fish Fingers, Prawn Cocktails, Fried Fish, Fish Curry (one of my favourites) Poached Fish and Grilled Fish.
So if you do not feel like cooking any of the above just buy some Fish & Chips ready cooked and you will still be getting a really good Fish Meal.
