What beautiful Poinciana Tree Blossom – in our driveway. This is the time of year they are coming out all around our Town. Notice the lovely shade and the Blossoms on the ground…. Such a lovely photo.

Let us have a Recipe today…..

Corn Chowder

2 rashers-Bacon (chopped); 1-Onion; Stick or 2 of Celery; 1½cups-Milk; 1cup-Partly Cooked Rice; 1-Carrot (grated); 1can (420g)-Creamed Corn; 1can- (420g)-Corn Kernels (drained); Cheese (grated for topping).

Fry Bacon, Onion & Chopped Celery till soft & brownish to bring out the flavour.  Add Milk, Rice & Grated Carrot.  Cook till Rice takes up the Milk.  Add both cans of Corn & mix well.

Pour into a Casserole dish, put grated cheese on top & cook in a moderate oven till cheese is browned.

Turn oven off & leave dish in for a while to soak up juices.

Beautiful Poinciana Tree

Lovely Shade from Poinciana Tree on our Driveway.

The Poinciana Tree is overhanging from my neighbour’s garden and has given us all this lovely shade and red blossoms on the pavers. Lots of seed pods still hanging from last Season. It is a beautiful spot to walk under and helps keep us cool from the 30 to 40 deg. heat. at this time of the year here in Carnarvon, Western Australia.

Here is a closeup photo of the Poinciana Flower

If picked to put in a vase, these flowers do not last very long, maybe a day or two but look very pretty if put in with some greenery.

As it is our Summer here I thought you may like a Smoothie Recipe today or – maybe you call them a Milk Shake.

Banana Milk Shake…..Smoothie.

2 – Carnarvon Ripe Bananas: 1 tsp – Sugar or Honey; One and a half glasses – Cold Milk.

Put all in Blender – Blend approx. 30 Seconds pour into Glasses.

Serves Two

Alternative: Add two scoops Vanilla Ice-cream to Blender with the above recipe:

Or: add one Scoop to individual Glasses before serving, pour Milk Shake on top of Ice-cream.

Healthy Breakfast Special. ….. without Ice-Cream.

Ingredients as above but add (per person)5-Almonds; 2-Brazil nuts; 1tsp.Psyllium Husk (if liked); 1-dried Apricot or Prune or Date; 1tsp-Honey. 1tsp – Ground ASL= (Almond,Sunflower,Linseed).

Put all in Blender-Blend approx. 30 Seconds or till Blended …. pour into glass, drink straight away (Quite thick and filling)?

Other Milk Shakes

Use Fruit of your choice instead of Bananas and proceed as above.
