Fish for Friday!

Very pretty Basket of Flowers sitting on my outside settee. They are mixed blossoms, some from my garden and some are artifiial but they make a lovely display.

Well – what about Friday? – so a good idea is to make up a basket or vase of flowers for yourself to look at indoors for the weekend. Or maybe give a gift of flowers to give to a friend. Just a few from the garden with some leaves would make a lovely arrangement. Alfoil is nice to wrap around the stems to make a bunch look more special. If you are going to a friends for tea or coffee it is lovely to take a small posy for your hostess.

Fish for Friday is a nice idea, so that once a week you would be getting a fish dinner, because as we all know fish is very good for us and most times we forget to eat it.There are several ways to cook it but best to cook the way you especially like it. However here is one way to try.

Fish Nuggets:

A nice piece of white Cod or similar fish. Cut into dice about one inch squares.

Put flour into kitchen bag with a sprinkling of white pepper, sprinking of garlic, small pinch of turmeric. Then add the diced fish and shake around in the bag till all are coated.

Cook in a small amount of your favourite oil in a frying pan, turning over so all get a nice brown colour and cooked. They do not take long to cook in the hot oil.

It’s nice to Work!

A Lovely arrangement of Real Flowers from my Garden plus Artificial ones make up this pretty picture.

Do you think it is nice to work? Well it all depends on what sort of work it is of course. We are all meant to work for our living not just to rely on others to supply us with whatever we need. Unless of course we are unable sometimes in our life to be able to. Then we must rely on others to help us. But if we are able bodied sometimes we can choose the work that we like to do. To be self employed is great but to work for someone or an organization then we should do our best for them and feel a sense of achievement of our work. Remember they are paying us wages so we can live life.

What a joy it is to do some work that we really like, maybe Craft work that we can sell and really enjoy doing it. Two of the things that I like to do are: Writing and Painting. So will put a poem here that will be in my next book (hopefully) plus I can put a Painting on to show you. I have had Exhibitions on an off for quite a few years… Yes, that is work but it is work that I can enjoy. Am hoping you can enjoy some of the work that you do, especially if you are working for someone or helping them.

So it can be nice to Work!

Today will never come again, so what are we going to do? It gives us time to think for a while of what a lovely day it could be. First let us think of our days that are past, they seem to have gone so very fast. But today we can do something different again. Something special just for today. Maybe phone a friend and have a chat. This maybe our last day, fancy that. However we may have many more days to come. Each day will come – never to return. Because Tomorrow will be another day to treasure. Today will be gone and when – Tomorrow comes it will be called Today!

Cyclone

What a lovely Hanging Basket of plants and flowers, which was in our back garden.

This time of the year (January) we are watching out for a Cyclone that is coming down from the North along our coastline. Hoping of course that it will go out to sea and fizzle out with no damage to our towns dotted along the coast of N.W. Australia.

All things like hanging Baskets for instance are a hazard and need to be removed before they get blown about by the Cyclonic winds and Tropical rain. There is a lot to do when Cyclones are about so that we can keep our houses and properties safe, like putting away anything that is likely to be moved by gale force winds.

Most people already know now how to prepare but it is good to get new information from our radio’s or television Weather Forecasts when a Cyclone is approaching.

It is nice to sit and read while waiting for a Cyclone – (that is when you have done everything necessary to be prepared)

The book ‘Jessie’s Story’ is about my life, I am the baby in the Photo on the Cover of the book. It has a bit of History of my life during the Second World War and different places that we have lived in before and coming to Australia. Where I now live, having emigrated in 1973. It’s nearly lunch time now and what have I done? Nothing much it seems under the Sun. But I did get up and not stay in bed. Mainly because this body needs to be fed. So up I got to start off the day, to get washed and dressed. We must get that out of the way, before we think of Breakfast. Now what shall it be? Something cooked or something on toast? Maybe some fruit or cereal as well as the toast? Goodness me the time has flown.

Never mind, it will be Lunch time soon..

Our Changing Life!

When is a Baby not a Baby ?
When is a child not a child?
When is a teenager not a teenager?
When is a teenager an adult and a parent?
An adult can become a Mother.
Also an adult can become a Father.
The Mother later becomes a Grandmother
and a Father likewise becomes a Grandfather.
After this they can become Great Grandfather and Great Grandmother.
They can become G.G. Grandparents but
not often do they live that long.
Then they are gone and the Cycle keeps on, keeping on.
So there we are – a Baby, a Child, a teenager then an Adult.
Life continues in a never ending circle, with all theses stages of life.
While on this Earth we have a Destiny.
Each one is different, each individual, is different in colour, creed and  body.
Be yourself – the way you were made, as a Special Baby, Child, Teenager and Adult.
So where are you at now?
Enjoy your life if you can, just where you are now in this time of life.
Soon it will be gone and the next Stage of life will be there.
You do not see the transgression from one stage to the next.
It just happens without our help.
And we are there.

I Hope you like the above little verse which I seem to have written some time ago.

However it is still relevant today.

So we should really begin to enjoy our life if we can, where-ever we are.

The Photo on the cover of the book above shows the changing stages of life. I am the baby in the picture, then my Mother, my Grandmother and my Great Grandmother. So the book is the story of part of my life that many people have found very interesting to read. Starting off as a child in the Second World War and up to the present day (at the time it was written).!P

Baked Egg Custard

What a pretty Basket of Flowers. The Daisies are artificial – all the rest are were real from my garden.

Today how about a Recipe for Baked Egg Custard?

Here we are then – this was one of my Mothers Recipes, very simple to make and can pop it in the lower part of the oven if you are cooking anything else so it does not get cooked too quickly. I used to like the taste of the Nutmeg that was grated on the top.

This is very nice for little children to eat, also for invalids as well as for us to enjoy.

Another thing you can do with this recipe is to put it into a pastry crust that has been partly cooked, then back in the oven for the Custard to set.

Recipe: Baked Egg Custard.

Whip up 2 – Eggs. Cover with Cold Milk & Stir in 1 Tbsp. of Sugar.

Sprinkle a little Nutmeg on top. Cook in Slow Oven till Set.

From the Bible….. John Chapter 12 verse 24.

I tell you the truth, unless grain of Wheat falls to the ground and dies, it remains only a single seed but if it dies, it produces many seeds.

It makes you think of all the seeds that we plant they seem quite dead, lots of them we eat as food. The ears of Wheat, Barley and other grain seeds are often ground into flour for cooking etc., But think of the seeds of the flowers that have grown, even in the Basket of Flowers in the photo above. Those seeds would not have sprouted into those lovely blossoms if they had not been sown into the ground. So in the dark of the earth they begin to live and come alive bursting upwards through the soil, just a little tiny stalk at first, then come the leaves. What a joy to watch them grow from a tiny dead seed into a magnificent flower or even a tree.

Can you imagine our Earth without any plants and trees …… remember they all produce after their own kind. Just as we as humans produce after our own kind as human beings and the animals after their own kind, as the seeds are implanted into the females’ by the males.

Well, these can be my thoughts for the day.

Quick Recipe for today: Chocolate Coconut Balls.:

1pkt – Milk Arrowroot Biscuits. 1cup – Desiccated Coconut. 200g – Sweetened Condensed Milk.

2tbsp. – Cocoa. Extra Coconut for Coating.

Method: Crush Biscuits, mix with the other Ingredients.

Mold into small balls and roll into the extra Coconut to coat each one.

Refrigerate to set.

* Yummy for Afternoon Tea or Parties.*

Runner Beans?

Fresh Picked Brown Leaves with Artificial Roses.

They look lovely in this display ready to take to Church.

Would also make a nice presentation in your home or office for a few days.

How about a Runner Bean Recipe:

Runner Beans, Garlic Powder, White Pepper, Oil.

Wash, trim, and cut the Runner Beans (the way you like them). Put in a Microwave dish. Sprinkle with the Garlic Powder and White Pepper. Then drizzle small amount of your favourite Oil over. Shake it all about and cover to put in Microwave oven for about two minutes on high, or until they are cooked to your liking.

This is a quick and easy way to cook the Runner Beans and they taste really good. Remember do not add any water when you cook them this way.

Baked Tomato’s

Green Leaves can make a nice display if you have not got any colourful flowers around. They make a nice Basket of Flowers.

Here is the Baked Tomato Recipe for you:

You will need: Tomatoes; Dried Basil Herb; Black Pepper; Olive Oil.

Method: Cut Tomatoes in half.

Lay Cut side up on Oiled Baking Sheet.

Drizzle the Olive Oil over

Sprinkle with Herbs & Pepper.

Cook in hot oven till bubbling & cooked through.

Serve as Vegetable with Dinner.

Or on toast.

Gluten Free Date & Banana Cake *

Just Artificial & Dried Flowers today but they still look lovely.

Do you like Bananas and Dates? This is a Gluten Free recipe that I have made and seems to work O.K. It is also good to eat for anyone who is not gluten free. So all family can hopefully enjoy it.

I also found it was quite tasty with butter and lemon curd (spread) or jam put on it when you cut a slice to eat.

Round ones are good but I made a square one which is easier to slice and butter.

Here is my new Recipe:……

Date & Banana Cake:

3cups: Gluten Free Self Raising Flour.

1cup: Dates + heaped Teaspoon Bi-Carb.

2: Banana’s or (3 small ones) Mashed

Sugar to taste at least half a cup.

1teaspoon: White Vinegar.

2oz: Margarine.

Method:

To Soak Dates: Sprinkle with the Bi-Carb, – Cover with Boiling Water – allow to soak half to 1hour. (I find it best to cut Dates in half before soaking to make sure no date stones are in them).

Rub Margarine into Flour with your hands, then Mix All Together (yes – put Date Water in) if necessary add a bit more water but don’t make the mixture too wet.

Put into lined Baking Tin….

Sprinkle over the top of Cake Mixture with extra Sugar.

Bake in over 180deg. approx. 1hour.

How about FISH for Dinner?

My Lovely display of Artificial Flowers in a Basket with Fresh Palm Leaves.

How about choosing to have Fish for dinner –

it is excellent protein for us and can be very tasty.

Here is a Pen & Ink Drawing that I did of a Fish.

Yes This is a Fish….not sure what sort though.

So what Fish do you like to eat?

I think I like most Fish really and find there are lots of ways to cook them.

The main Fish around here are ….North West Snapper, Black Snapper, Pink Snapper, Taylor, Mullet, Yellow Tail.. Also Crabs and Cray’s (Lobster)

Non edible Fish or Creature’s are: Dolphin, Sharks (the small Sharks are good to eat) Groupers, Blowies, Sea Snakes, Turtles and the usual small Sea Creatures that abound in most places like Star Fish, Jelly Fish, Stone Fish, Cuttle Fish. We have beautiful beaches that you can stand on the Shore to Fish from.

Our beaches can rival the best of anywhere in the world.

Here is a Recipe: – Salmon Mornay

415g,tin-Pink Salmon; 2cups-Cooked Long grain Rice; Cheese Sauce; Grated Cheese; White Pepper.

Method:

Spread the Cooked Rice into a Lamington Dish, Pile the Salmon on top of the Rice, Cover with your Favourite Cheese Sauce and Top with Grated Cheese. Sprinkle with the White Pepper.

Put into a hot oven until heated through and Cheese has melted.

Serve Hot.

Alternative:

Tuna can be used instead of Salmon.

Other tasty things to make with Fish are: – Fish Cakes, Fish Fingers, Prawn Cocktails, Fried Fish, Fish Curry (one of my favourites) Poached Fish and Grilled Fish.

So if you do not feel like cooking any of the above just buy some Fish & Chips ready cooked and you will still be getting a really good Fish Meal.
